not likely.

that two-post days will be the norm, but here's to starting strong out the gates again. :)

have you ever had one of those days where you are just happy? for no reason at all you feel like crying tears of sheer happiness? i'm having one of those days. it may be in part to getting some SERIOUSLY awesome music love from a dear friend of mine... take a listen to this one.



this video makes me feel alive. and summery.

i made some time for me today, to do one of my favorite things. i laid in the sun for an hour. it was awesome, and while i did it i dreamed of being on the beach (my ultimate dream home) and thought about sipping a frozen drink with a cute little umbrella in it served by a really tan, sexy man with huge muscles *a girl can dream.... yes?!*

now i'm typing while chris sits in the living room talking to someone on the phone giggling away. he makes me so happy.

it's been a while...

since i've written. 



not because i don't like you guys anymore- just because i needed a little break from it all. the hubs and i are in the middle of a transition- which always seems to be the way it goes with us- and it's been a little trying this time around. we spent the first few weeks back from japan in lovely hawaii and had a blast. good weather, swimming outside in nov/dec was quite a treat, and my mom's fabulous cooking made it thoroughly enjoyable. i have to admit, it's hard to leave hawaii after you spend a month there! if only it weren't so expensive! 




so then we continued on to georgia to spend time with the hubs' family and kids. we got here before christmas. we're still here. we didn't plan to still be here. but we are. stuck. in. limbo. we are grateful that we have a place to stay while we are job searching, but there's something to be said about having your own place. we are ready to have our own bed, our own car, and our own stuff surrounding us. so, we wait. and hope. and hope some more. the worst is waiting on an email with potential confirmation of a job- please hurry up potential employer, you're making me crazy!


in the midst of all of this moving and visiting family and being in limbo, we found out that i'm preggers! yep, that's right, little ol' me is going to have a baby! it still seems pretty unreal, but the tighter my jeans get the more real it becomes! i'm finally feeling better these days now that i'm in the middle of week 10, but weeks 6-9 were pretty crappy. i was exhausted, everything tasted weird, and i was constantly sick to my stomach. i just kept hoping it'd all go away! i'm back at the gym these days and i'm running and lifting, so i'm feeling soooo much better. i'm hoping to keep working out until i can't waddle to the treadmill anymore. HA. 



there's the scoop for now. i'll keep you posted on the job- think happy thoughts for us!! i'll be back to regular blogging now- yahoo!

fun with the kids

yesterday, we went and surprised my step kids by showing up to their after-church lunch outing. they were in shock when we first walked up, but they quickly came running and haven't stopped talking yet! we hung out at the in-laws house, did some grocery shopping, dinner and then topped off the evening by preparing cinnamon rolls for today's breakfast. lexi (step-daughter who is 6) and ares (my nephew who is 5) were dying to help, especially because they thought it was the usual pop-the-can-put-them-on-a-pan type they are used to. the first thing they asked was what in the world is that blob of stuff on the counter (it was the dough i had already started and let begin to rise.) they had to bring it into their world and quickly likened it to play-dough that wasn't so breakable. they learned what a rolling pin is- because it is not a 'stick thingy that rolls like a car'- haha. they rolled out the dough, brushed on the butter, sprinkled the cinnamon sugar and rolled up the rolls. they were so amazed at how the big flat piece of dough turned into cinnamon rolls. it is so great to be around inquisitive kids~ it's amazing how their little minds work. they were so proud of themselves and what they had done.

the results::



the recipe:


the rolls~
1 c. water
2 T. yeast
2 t. honey
2 1/2 cups milk
1/2 cup butter
1/2 cup honey
4 t. sea salt
8 cups flour



the cinnamon-y inside~
1/2 cup butter
3/4 cup sugar (i used brown sugar)
1/2 T. ground cinnamon 



the icing~
1/4 cup butter
3 T milk
1/2 t. vanilla
1-2 cups powdered sugar





In a large bowl, mix 1 cup very warm water, 2 T. yeast and 2 t. honey.  Allow to sit for about 5 minutes.  In the meantime: 
Melt a stick of butter in a large saucepan.  Add 1/2 cup honey, 4 t. salt and 2 1/2 cups of milk.  Heat this to 120 degrees.
Pour milk mixture into yeast mixture and stir.  Stir in 8 cups of flour, 2 cups at a time. (add more if you need it)
Knead the dough for 5-10 minutes.  Plop it into a bowl, cover it and let it rise for 1  1/2 hours.

After dough rises, punch it down and knead.  Cut the dough in half, setting one half aside. 
On a well floured surface, roll dough into a rectangle, about 1/4 inch thick.
Use a pastry brush to spread 1/2 of the melted butter all over the rectangle.  Sprinkle 1/2 of the cinnamon mixture all over the butter. 
Roll from one end. 
Cut into 1/2 inch  - 1 inch slices.
Place in a baking pan and allow to rise for about 30 minutes. Repeat for other half of dough.
Bake at 350 degrees for about 25 minutes, or until golden brown.

things are getting a bit merrier....

so, this year i am struggling (even with only five days left) to get into the holiday spirit. last night i had a mini breakdown and cried to the hubs about how un-merry and blue i was feeling. *the blue is not just because the hubs likes the bedroom the same temp as an icebox- but that never helps- wink* 


this morning i awoke to an empty house - the hubs and his mom were out shopping already - and he returned with his usual 'i love you' gifts! what an amazing guy i have! first, was a tall skinny latte from starbucks- my ultimate pick-me-up. i would have been perfectly thrilled and 'picked-up' by just that, but there was one more little surprise.... a bottle of wonderful german eiswein. *in case you aren't a wino, it's wine made from the grapes which have been hit with the first frost- it's insanely tasty and i'd recommend it to everyone!* 





the day was filled with a little shopping in what i affectionately call 'kid hell' which is better known as toys'r'us. i have a serious disdain for that place because it is inevitably a zoo and everyone turns into crazed shoppers that HAVE TO HAVE such-and-such. boo for them. then there was homework... which was not fun at all. a lovely dinner at the in-laws new house. to top off the evening we lit the fireplace for the first time and sat around the fire with some yummy eggnog. 




it's beginning to feel a bit more merry. anyone else feeling grinchy this year?!

the parentals.




had an anniversary. it was yesterday and celebrated 31 years. yep, that's right, thirty-one years! WOW. so, because of the special occasion and the fact that the hubs and i are co-located with them right now we decided to go all out. there's something you must know before i tell you what we did. my parents do NOT go out to eat. my mom is a fabulous cook, so they don't see the point. there are a myriad of reasons: it's too expensive, it's inconvenient, bad service, oh yeah- and the main reason: my dad is spoiled by mom's fab cooking! ;)

the plan was my mom shouldn't be cooking on her anniversary and my dad would need to enjoy the meal. we thought long and hard (there are tons of great places to eat here in hawaii) and ended up deciding on Duke's. it's right on the beach of waikiki and has a covered, yet open eating area. it's fabulous and beachy and totally famous. we scored reservations and were well on our way to a (hopefully) good meal. we had to be there at 6:30 which meant we had to leave right around 5 to get there in enough time. traffic on oahu is a nightmare (and the locals think the metro is a stupid idea- hmmm...). we walked past the brand new trump tower. hmpf. fancy pen shop with 23,000 dollar pen. yep. denny's. conveniently located a block from trump. nice. christmas lights beginning to illuminate the trunks of every palm tree. humungous wrapped packages with bright shiny bows. string quartet on the street playing christmas music. a man covered from head to toe in newspaper sitting on a box. reading the newspaper. strange. more japanese people than i saw in japan.

then we are seated. it's noisy and delightful smells smack you in the face as we sit ogling the menu. there was a lot of fish. chicken. huge steaks (one of which a man at the next table was eating- RAW. it was red- completely red. gross.) anyway. there were yummy mixed drinks- both virgin and far from being virgin!

here's what we ordered:

drinks:
red stripe beer (for the papa)



mango banana smoothie for the hubs that doesn't like the taste of alcohol.
a mango-rita (for mama- it was WAY strong but tasty!)
pau hana punch for me (absolut mandarin, lime, passion fruit & cranberry juices)
*if you like to drink, it's the place for you- yum-o!*

appetizers: 
sashimi. yum.
poke rolls. yum x100!



main: 
huli huli chicken
steak and coconut shrimp
machong fish - lime and chili roasted
slow roasted prime rib



dessert:
coffee (if you know our family at all - this is a MUST)
hula pie. (aka "holy crap. that's a huge piece of pie!")



*take a good look- it's macadamia nut ice cream with oreo cookie on the bottom and thick chocolate fudge covering the top. don't forget that whipped cream!*

as joey from friends would say, "WooooW!"

all of the food was incredible. i would honestly recommend everyone go to duke's if they are every here in hawaii (or near one of their places in cali). well worth all of it. one of the best meals we've ever eaten out. hands down. our hats are off to the chef.

sir sprouts a LOT

so, did you know that you can grow wheat berries, or almonds, or barley? WHO KNEW??!! well, my favoritest friend lacy kept telling me about sprouting this-and-that and i kinda thought that would be a ton of work, and just not worth it. i was more wrong than, well, just let your imagination run wild about the most outlandish wrong you can think of, then multiply by 100! it's so easy and fun and exciting... so here goes. you pick your berry, or nut, or grain. i chose wheat berries because they were the first thing i came across down the endless aisle of "bag your own" stuff at the health food store. here's what you do.


first things first, you get a strainer and dump in your loot. rinse it well, ensuring there are no funky looking pieces. then dump your loot into a bowl and cover with water. then take a piece of cloth, or a thin dish towel and cover the bowl. stick the entire thing into one of your kitchen cabinets and let it sit there for about 12 hours. (this isn't exact, do don't freak out if you aren't right-on-the-dot!) remember this is going to be exciting, not daunting! 


when you hit the 12-hour mark, you'll essentially have a bowl of bloated loot. it kinda looks like how you might feel during those dreaded days of the month.... i know you know what i'm talking about- don't try to act like you don't! anywho, strain the contest of your bowl, and when you are done straining, allow the strainer to sit on the bowl you were using until they are completely drained. you don't want there to be any puddles in your bowl or you'll just end up with a moldy mess. so drain it well. then, empty the bowl and dry it out. dump your soon-to-be sprouts back in. re-cover, and put them back in the cabinet.



another 12-hours have gone by. now, you'll just repeat the process. rinse. drain. by now, your loot will have little tiny sprouts, and you might just squeal a little when you see them! it's super exciting (or at least for little ol' me it was!)



you'll have to repeat this process for about two days- this will vary depending on what you are actually sprouting, but when the sprouts are about twice as long as the original loot. this is the point where they are ready to go into bread, or to cook like oatmeal, or make a fun salad. however, you can also continue the process and grow wheat grass which is both ok to eat naturally or you can use a juicer and drink up until your heart's content. 



i made bread with mine which ended up delish! i used two different recipes and we did a taste test. the fam was split down the middle on which was their fav, but liked both. i would recommend doing a taste test yourself. just be aware that the first recipe makes two large loaves, plus some rolls (or three loaves) and the second recipe only makes one loaf.

1st things first:

2 1/2 cups warm water
2 scant Tbs. active dry yeast
Allow the yeast to proof (bubble) for 5 minutes

Stir in:
1/2 cup oil
1/2 cup honey
1 Tbs. salt
2 Cups Sprouted Grains - whole or ground lightly
4 cups flour (any combo of wheat, rye and white you like) Beat well. Cover and let this “sponge” sit 45-60 minutes.
Stir down and gradually add:
3-4 cups flour (any combination)


Turn dough out onto a lightly floured surface and knead until smooth.

Place dough into a greased bowl - turn it over and around to coat the whole of the dough.
Cover and let rise until doubled (60-90 minutes).
Knead dough down in the bowl, divide and shape into 2 - 3 oblong loaves. Place in well greased loaf pans and cover.
Let rise 60 minutes or until almost doubled.

Bake at 375º for 35 to 40 minutes.
Remove loaves from pans and cool on wire racks.


the result::




2nd things second:


¾ cup warmed ground sprouted wheat
¼ cup brown sugar
½ tsp salt
1 tbsp melted butter
1 tbsp yeast, dissolved in
¼ cup lukewarm water
1¾ cups unbleached flour

Combine sprouted wheat, sugar, salt and butter. Add dissolved yeast and flour. Knead well. Place in covered bowl and let rise until doubled in bulk. Punch down and shape into round loaf and let rise in a buttered ovenproof casserole. Bake at 350 degrees for 25-30 minutes.

a letter to the president.


If I can find this man while I'm here in Hawaii I will shake his hand and thank him for his service, and honesty. Please take a moment to read his letter to the President. It's worth a few minutes of your time!

This venerable and much honored WW II vet is well known in Hawaii
for his seventy-plus years of service to patriotic organizations and causes
all over the country. A humble man without a political bone in his body,
he has never spoken out before about a government official, until now.
He dictated this letter  to a friend, signed it and mailed it to the president.
 
Dear President Obama,     
         
     My name is Harold Estes, approaching 95 on December 13 of this year.  People meeting me for the first time don't believe my age because I remain wrinkle free and pretty much mentally alert.
 
I enlisted in the U.S. Navy in 1934 and served proudly before, during and after WW II retiring as a Master Chief Bos'n Mate.  Now I live in a "rest home" located on the western end of Pearl Harbor , allowing me to keep alive the memories of 23 years of service to my country.
 
One of the benefits of my age, perhaps the only one, is to speak my mind, blunt and direct even to the head man.
 
So here goes.
 
I am amazed, angry and determined not to see my country die before I do, but you seem hell bent not to grant me that wish.
 
I can't figure out what country you are the president of.
You fly around the world telling our friends and enemies despicable lies like:
             " We're no longer a Christian nation"
             " America is arrogant" - (Your wife even
                 announced to the world," America is mean-
                 spirited. " Please tell her to try preaching
                 that nonsense to 23 generations of our
                 war dead buried all over the globe who
                 died for no other reason than to free a
                 whole lot of strangers from tyranny and
                 hopelessness.)
I'd say shame on the both of you, but I don't think you like America, nor do I see an ounce of gratefulness in anything you do, for the obvious gifts this country has given you.  To be without shame or gratefulness is a dangerous thing for a man sitting in the White House.
 
After 9/11 you said," America hasn't lived up to her ideals."
 
Which ones did you mean? Was it the notion of personal liberty that 11,000 farmers and shopkeepers died for to win independence from the British?  Or maybe the ideal that no man should be a slave to another man, that 500,000 men died for in the Civil War?  I hope you didn't mean the ideal 470,000 fathers, brothers, husbands, and a lot of fellas I knew personally died for in WWII, because we felt real strongly about not letting any nation push us around, because we stand for freedom.
 
I don't think you mean the ideal that says equality is better than discrimination.  You know the one that a whole lot of white people understood when they helped to get you elected.
 
Take a little advice from a very old geezer, young man.
 
Shape up and start acting like an American.  If you don't, I'll do what I can to see you get shipped out of that fancy rental on Pennsylvania Avenue .  You were elected to lead not to bow, apologize and kiss the hands of murderers and corrupt leaders who still treat their people like slaves.
 
And just who do you think you are telling the American people not to jump to conclusions and condemn that Muslim major who killed 13 of his fellow soldiers and wounded dozens more. You mean you don't want us to do what you did when that white cop used force to subdue that black college professor in Massachusetts , who was putting up a fight?  You don't mind offending the police calling them stupid but you don't want us to offend Muslim fanatics by calling them what they are, terrorists.
 
One more thing.  I realize you never served in the military and never had to defend your country with your life, but you're the Commander-in-Chief now, son.  Do your job.  When your battle-hardened field General asks you for 40,000 more troops to complete the mission, give them to him.  But if you're not in this fight to win, then get out.  The life of one American soldier is not worth the best political strategy you're thinking of.
 
You could be our greatest president because you face the greatest challenge ever presented to any president.  You're not going to restore American greatness by bringing back our bloated economy.  That's not our greatest threat.  Losing the heart and soul of who we are as Americans is our big fight now. And I sure as hell don't want to think my president is the enemy in this final battle.

lost in crafty land

hey everyone- i know, i know, where in the world have i been, right? well, i'll tell you- sort of. i got to my parents house here in hawaii and i fell into the abyss, otherwise known as the sewing room. there are piles and piles and more piles of fabric. there is thread in every color, size, and thickness you could ever want. there's ric-rack, buttons, stencils and marking pencils (also in every color). so, i went in to check it out and now i can't stop. i'm addicted. i am cutting and sewing and hand quilting and stitching until my fingers are raw. i'm working on a lot of new designs and i can't wait to share them all with you. *they just aren't quite ready for the public just yet* i am excited because i am in the process of deciding wether to open or not to open my very own etsy shop! i'm weighing the pros and cons and trying to finalize the ideas i am creating. if any of you have any tips or comments about having your own place on etsy let me know! i'd love to hear what you have to say about it! in the mean time, i promise i'll be posting more these days, i've got so much to tell you all, just not enough time in the day! yikes the hours just fly by when you're crafting! :) happy crafting to all of you!

sunday, sunday, sunday




thank you for being so wonderful- every week- without fail. you are the perfect lazy day. you let me sleep in. you're quiet. you are full of nothing and everything and you refresh me oh-so-much. i slink out of bed late and the sun is already blazing. you convince me to lace up my tennies and hit the streets of this concrete jungle. you try to psych me out by raining like hell as i am walking out the door. i wait. patiently. you relent and allow me to run my tired legs and lazy body around the painful loop of the crater. my feet pad the ground. left. right. left. right. the tunes blaring in my ears keep me right on tempo. the hills seemingly laugh as i struggle to get to their top, but alas, i am triumphant. they can't break me. the wind almost did though! in my face up a hill which seems to never end- oh wind, i hate you sometimes! but in the end, i finished and get to spend the rest of this lazy day with my wonderful family. the only thing that could make it better would be my sister, brother and close friends all here to spend it with me! what are your plans for sunday?

i'm thankful november 17th

i'm thankful for being so creative- i'm not sure exactly where i got it all from, but it's a part of me. i love when i get a new (in my opinion- fabulous) idea and it makes me feel all sparkly inside. best.feeling.ever.

i'm thankful 13th, 14th, 15th

i'm so terribly late on these, but i guess late is better than never. i've been very busy getting my fill of my mom in this precious little time before we leave hawaii. it's been so much fun i can barely stand it. but, without further ado- 


i'm thankful for the wind being blustery like it should be in november, even though it's coupled with blue skies and weather in the 80s. 


i'm thankful for my hubby being such a good sport when i continually interrupt his internetting to show him all of the creations i've been making. i love him. 


i'm thankful for a decent meal for $1.50 because we are trying to save our money for our time with no jobs. (but i'm really secretly scared because this economy isn't great, but more on that later!!)


thanks for bearing with me, friends, while i'm enjoying my vacation. i'll be posting more regularly soon! i have lots to share with you!!! happy thankful days to you!

even the rain

is beautiful here in hawaii... i'm so jealous of everyone who gets to live here all of the time. if the schools were better, we might be staying... but since we can't, i'm soaking up as much of paradise as i can! hope your day is full of happiness and rainbows! happy happy day to you all!

i did it!

i felt i needed a change~ so i thought a lot about it, hemmed-and-hawed a lot, and then embraced it. here's how it started: 


first: new haircut. i told the girl in general terms what i wanted and gave her the liberty to do what she thought would be best for my face, etc. she was thrilled to be able to be artistic, and even kept me facing away from the mirror the entire time to keep the suspense building! i was in shock at the result, and am totally loving it! let me know what you think!


second: i got out of my traveling exercise slump. this morning my mom, chris and i all got up at 6am (to attempt to stay away from the hot morning sun) and walked and ran about 3.5 to 4 miles. it got my blood flowing first thing in the morning and made my whole day feel oh-so-much better!


third: i started the kellogg's special k challenge. i've done it once before and ended up feeling great at the end of the two weeks, so i thought it would be good to kick-start my get back into shape plan. one day down, 11 more days to go. 


fourth: we went to jamba juice. instead of getting the GINORMOUS thousand ounces of fruity goodness, i opted for the wheatgrass detox shot. (lacy- i finally tried it!!) it was served in a tiny (think smaller than those little plastic cups the dentist gives you full of flouride) cup on a tiny tray with a slice of orange as a chaser/ clean the (chris' description was 'dirty taste') earthy taste out of your mouth. i am not sure how to describe it, but it was pretty tasty to me. maybe i'm weird! chris opted for the much-more-normal pumpkin smash which was likened to pumpkin pie in smoothie form. it was too festive for its own good. luckily it is only available during the holidays; otherwise i'd be downing 370 calories of flavor overload all too often!


fifth: we shopped. went to old navy and bought some new shirts. i desperately needed them because the awful washer we had in japan had a knack for stretching all of your clothes into an oblivion. yay for that. but at least i got some new ones now! while i was there i decided to fully embrace this changing of mine and i bought a little dress. it's black (i know, i know... colors will come) and can be worn by itself or will be perfect with a pair of leggings! woohoo! can't wait to get to the cooler weather to try it out. in the meantime i'll just have to wear it in the sun! 


sixth: i made an uber-healthy dinner. black beans, chickpeas and a myriad of fresh veggies were concocted into a stew i made up as i went. it turned out great, and was a hit with the boys (who aren't big fans of soup). score


tomorrow i'll be up before the sun again running my ass off. literally. i'll keep you posted. in the meantime, what are the recent changes in your lives? happy ch-ch-ch-changes!

we went to the local farmer's market here in honolulu. it is held in the parking lot of the community college at the base of diamond head. it's beautiful, and shady and green. there are amazing gardens planted by the students, complete with a billion different types of cactus. as you walk to the main entrance you are immediately greeted by the smell of fresh roasted coffee. there is handmade chocolate, orchids, bird of paradise flowers in buckets, pork sandwiches with yummy coleslaw, and a plethora of organic veggies. a bread shop which had every type of bread you could imagine: kalmata olive, cranberry walnut, herb, rolls, breadsticks, and scones. then there was the naked cow dairy. the name was so cute we couldn't pass up their tiny stall. it was packed with people vying for a front position where they could easily reach a tiny spoon to scoop up the delish-butters, herbed feta, or handmade cream cheese. wow. i could get really fat if i were friends with the girls who ran that place! my hubby was thrilled i brought him home a small container of the feta- that was, until i told him how much it cost. there's quite a premium for organic, fresh, good-for-you food. 


as we were eating some of our loot from the market, a commercial cam on the tv telling everyone about how they could get a double burger from burger king for one dollar. it's any wonder our country is so fat and unhealthy. what a shame. it makes me sad to think that most people would opt for the dollar burger rather than the local food because it's sooooo much cheaper. i think things in america are really backwards- i don't think that crazy healthcare bill is taking this into account. how sad. 


anywho, get your butts to your local market. you will love it. your heart will love it~ and you might find your own naked cows that make your head spin they taste so good! happy farmer's marketing!
