refrigerator muffins




Refrigerator Muffin Recipe

1.5 cups flour
2 eggs slightly beaten
 1 cup whole wheat flour
2 cups shredded bran cereal 
1.5 cups sugar
2.5 cups buttermilk 
1 1/4 tsp baking soda
1 tsp baking powder
1/2 cup oil
1/2 tsp salt
1/4 tsp allspice
1/4 tsp cinnamon 
6 oz dried apricots (or any dried fruit you like)

mix together and allow to sit at least 3 hours, leave in refrigerator up to 3 weeks. 

bake in 375 degree oven for approximately 20 minutes. 

** i also like to add whatever fruit i have on hand to the muffins I'm making to add some more flavors- my favorites are mango chunks, banana and strawberries. enjoy!
